Cornbread Pancakes with Caramel Glaze

Serves 2 (6 pancakes)


Ingredients

  • 1/2 cup of gluten-free flour

  • 1/2 cup of organic cornmeal flour

  • 1 tsp of cinnamon

  • 1 tsp of baking powder

  • 1/2 of RxSugar alullose (MARIA20 for discount)

  • 1 whole egg

  • 1/2 tsp of butter flavor drops

  • 1 tsp of vanilla extract

  • 2 tbsp of organic whipping cream

  • 1/2 cup of organic light milk

  • 1 tbsp of apple cider vinegar

Sugar-Free Caramel Glaze

  • 1/2 cup of powdered monk fruit

  • 2-3 tbsp of sugar-free coffee caramel

Toppings

  • 1/2 cup of drained canned corn

Instructions

  1. Mix the milk with apple cider vinegar and let it sit for 5-10 minutes.

  2. Mix the dry ingredients for the pancakes, then incorporate the rest of the ingredients, stir without over mixing.

  3. Cook on a pancake griddle for 3-4 minutes or on a skillet for 1-2 minutes per side in medium low heat.

  4. Mix the ingredients for the glaze.

  5. Serve with toppings and enjoy!
