Lately I have been all about popsicles, these kind of dessert is one of the easiest and funnest to make. You just throw whatever you like in the popsicle container, plus you can transform anything into a popsicles, the ideas are truly endless and in this occasion I'm creating a Creamy Root Beer Cheesecake Popsicle!

Summer in a popsicle, this one of the definitions I would give this recipe, a very very American summer in my opinion.
The creamy part is made due the cream cheese and ricotta cheese used in this recipe, plus the cheesecake base is thanks to the cereal crunch from this recipe. These keto friendly, low calorie and gluten free.

Easy to make, fun and such a great step up of the usual root beer, kind of a float and cheesecake. The mix is simply amazing and each popsicle has only 36 calories! You can even add some collagen powder to add some gut health and protein content too.
To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

Creamy Root Beer Cheesecake Popsicles

Serves 10 servings
Ingredients
Cheesecake Layer
1 cup of almond milk
1 oz of cream cheese
1 tsp of vanilla extract
4 tbsp of granulated monk fruit (PURELYHL for discount)
1/2 cup of ricotta cheese
Magic Spoon Cereal - Frosted (purelyhealthyliving for discount)
Root Beer Layer
1 cup of Zevia Creamy Root Beer
1/2 cup of almond Milk
2 tbsp of granulated monk fruit
1 tbsp of Cacao powder
Method
Blend the cream cheese, ricotta cheese, monk fruit and vanilla or the cheesecake base.
Spread the cereal into each popsicle container and pour the cheesecake mix into each one of them, add your sticks for each popsicle.
Freeze for 3-4 hours.
Once the bottom layer has frozen blend the ingredients for the root beer layer, you might want to let the gas from the soda go.
Pour the mix on top of the cheesecake layer and freeze again overnight.
