About these Crispy Eggplant Pizza Fries:
This is extremely easy to make and extremely flavorful! The ingredients are also super basic and probably a list of ingredients you've already got in your pantry; marinara sauce, cheese and for the crispy factor I'm using crushed pork rinds.
The pork rinds, in this recipe work for the coating of the eggplant fries. You can get them at the store or you can crush some classic pork rinds (I try to stick to humanely raised pork) or you can also simply use almond flour to keep this recipe low carb and gluten free.
What's in these Crispy Eggplant Pizza Fries?
As I mentioned earlier, I used a pork rind panko, marinara sauce with no sugar added, egg whites for the coating, cheese, seasonings and of course our main ingredient, eggplant! The seasonings included in this recipe are real salt, black pepper, garlic powder and dried parsley.
Eggplants are actually a very fun veggie to prepare! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste. This recipe is a great and encouraging recipe to try veggies in different ways, not only plain old and boring green salads!

These are easy to make, cheesy, flavorful and so addicting! My old self would be so confused because I have times I just didn't liked eggplants but the recipes that I linked above and this one just makes the eggplant experience so much better!

Crispy Eggplant Pizza Fries

Serves 2-4 servings
Ingredients
1 large eggplant
1/2 cup of marinara sauce no sugar added
1/2 cup of crushed pork panko
1/2 cup of egg whites
2 tbsp of dried parsley
1/8 tsp black pepper
1/8 tsp of real salt
1/8 tsp of garlic
Method
Preheat the oven at 400F.
Slice the eggplant in pieces of 1/2 inch and lay them out in a baking tray then slice them into fries.
Place them in a large bowl and add the seasonings and mix well.
Pour the egg whites and mix again.
Place the eggplant fries in a baking tray.
Sprinkle the pork rinds on top.
Bake for 20 minutes.
Once cooled lay the fries in a plate, top with marinara and the cheese.
Microwave for 1 minute or until the cheese melts.
