Ingredients
1 (400g) bag of Yukon gold potatoes
2 tablespoons of Nutiva Liquid Coconut Oil
2 teaspoons of sea salt
1/4 teaspoon of freshly cracked pepper
Water for boiling
Dressing
1 lemon, juiced
3/4 cup plant-based sour cream (or Greek yogurt)
1 tablespoon of Nutiva Liquid Coconut Oil
1 tablespoon Dijon mustard
1 teaspoon garlic powder
2 tablespoons dried parsley
1/4 cup chopped chives
1/4 red onion, finely diced
1 cup chopped English cucumber
1/4 teaspoon freshly cracked black pepper
Red pepper flakes for garnish
Instructions
Begin by placing the potatoes in a large pot and covering them with water. Add 1 teaspoon of salt, and boil for approximately 20 minutes, or until tender.
Preheat your oven to 425°F (220°C).
Drain the potatoes and transfer them to a greased baking tray. Use the bottom of a glass to gently smash each potato, creating a flattened surface. Drizzle the smashed potatoes with Nutiva Liquid Coconut Oil and season with remaining sea salt and freshly cracked pepper.
