Ingredients

  • 1 large eggplant, sliced into rounds

  • 1/2 cup egg whites

  • 1/2 cup gluten-free flour

  • 1/2 cup panko breadcrumbs

  • 2 tbsp grated parmesan cheese

  • 1 tbsp miso paste (for coating)

  • 1/2 tsp sea salt

For Assembly:  


Instructions

  1. Slice the eggplant into thick rounds.

  2. Mix miso paste with a little water and spread on each eggplant slice.

  3. Combine gluten-free flour with sea salt.

  4. Dip eggplant slices into egg whites, then dredge in the flour mixture.

  5. Mix panko with parmesan cheese and coat the eggplant slices thoroughly.

  6. Air fry at 355°F for 23 minutes or bake at 350°F for 24 minutes until crispy.

  7. Spread marinara sauce mixed with miso paste on the toasted Royo Everything Bagels. Layer with crispy eggplant, cheese, and bake or microwave until cheese melts (about 10 minutes).

  8. Garnish with green onions, red pepper flakes, and optionally drizzle with hot honey. Serve hot and enjoy this flavorful, wholesome sandwich!
