Frosted Churro Butternut Squash Muffins

Serves 12 muffins


Ingredients

  • 2 cups of gluten-free flour

  • 1/2 cup of crushed gluten-free cinnamon cereal

  • 1 tsp of cinnamon

  • 1/4 tsp of ginger

  • A dash of clove and cardamom

  • 1 tsp of Crystal Diamond Baking Salt

  • 1 tsp of baking powder

  • 1/2 of RxSugar alullose (MARIA20 for discount)

  • 1/2 cup of brown granulated monk fruit

  • 2 whole eggs

  • 1 tsp of vanilla extract

  • 1/2 cup of vanilla greek yogurt

  • 3/4 cup of butternut squash puree

Frosting

  • 1 cup of powdered monk fruit

  • 3-4 tbsp unsweetened coconut milk

Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients.

  3. Incorporate the butternut squash, greek yogurt, vanilla extract, eggs, and mix well.

  4. Transfer to 12 silicone baking muffin cups.

  5. Bake for 19-20 minutes and let it cool.

  6. Mix the ingredients for the glaze, top the muffins with it and add more cinnamon, and crushed cereal (optional), enjoy!
