Goat Cheese Maple Cranberry Stuffed Sweet Potato

Serves 1 servings


Ingredients

  • 1 medium size sweet potato

  • Sprinkle of Vanilla Salt (or sea salt)

  • 2 tbsp of goat cheese

  • 2 tbsp of RxSugar Sugar-Free Maple Syrup (MARIA20 for discount)

  • 1/4 cup of fresh cranberries

  • 1 tbsp of crushed gluten-free chocolate cereal


Instructions

  1. Slice the edges of the sweet potato, poke it with a knife all round and cover in foil.

  2. Bake or air fry for 35-40 minutes at 355F.

  3. Once cooled slice it in half and add the toppings.

  4. Enjoy!
