We all love a good classic, right? Well, Mexican food is always on my mind and it's just something that I can't resist, in this occasion I'm mixing two of my faves; carrot cake and trest leches... for this recipe I grabbed my ingredients from Bubble (they rock), this place has everything and beyond for all our foodies that also like to take care of their bodies.


For this recipe I used Carrot Cake and Tres Leches! Well, some oats, coconut flour, monk fruit and this Turmeric Maple Pecan Butter, made with all the best ingredients and with a delicious touch of ginger. Along with m mix for the tres leches.

About this Golden Tres Leches Carrot Cake:

So the base of this cake is just some oats, coconut flour and also this Turmeric Maple Pecan Butter found at Bubble, made with simple ingredients and for the tres leches we'll be using coconut milk powder (or keto coffee creamer), greek yogurt and almond milk. This sauce will be soaking our cake.

Gluten Free Tres Leches


The Base of this Golden Tres Leches Carrot Cake:

I kept it very simple. I just mixed some greek yogurt, Turmeric Maple Pecan Butter, carrots, coconut milk powder. You can find everything at Bubble (I'm seriously obsessed). And for the filling of course we are using some of their products and for the toppings vanilla greek yogurt and some shredded coconut.



One of the best parts of this recipe is that it's just super easy to make, basically fail proof and with simple ingredients; no refined sugars, flours or oils. Instead healthy version of our favorite staples; Turmeric Maple Pecan Butter, monk fruit, organic greek yogurt, coconut flour and oats.

Moist, creamy and addictive! This cake turned out simply perfect, I'm seriously obsessed fro the moment it came out from the oven, plus the tres leches soaking all that cake... it just something you need to make ASAP!

Golden Tres Leches Carrot Cake

Serves 9 servings


Ingredients

Cake

  • 1/3 cup of oats

  • 1/2 cup of coconut flour

  • 1/3 cup of monk fruit

  • 1 tsp of baking powder

  • 3 tbsp of shredded coconut

  • 1/2 cup of Turmeric Maple Pecan Butter (PURELYHL for discount)

  • 3 eggs

  • 1 tsp of vanilla extract

  • 1 cup of shredded carrots

Tres Leches

  • 1/2 cup of greek yogurt

  • 1/3 cup of coconut milk powder

  • 3/4 cup of vanilla almond milk

Toppings

  • 1 cup of vanilla greek yogurt

  • 3 tbsp of shredded coconut

Method

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the cake.

  3. Add the pecan butter, eggs, vanilla extract and carrots, mix well.

  4. Transfer to a silicone 8x8 dish.

  5. Bake for 28 minutes.

  6. Once baked and cooled use a fork to create holes in the cake and pour over carefully the tres leches mix.

  7. Add your toppings.

  8. Cut into 9 pieces and enjoy!
