Accidents happen, and in the kitchen some of those accidents turned out being amazing! In this case I wasn't really sure about I was going for with this recipe but one thing was for sure, I wanted layers.
Just as life works, as the recipes continue the imagination continues to grow. My inspiration in the kitchen is nothing more than what I have in my kitchen, and the fact that there are a million ways to use one food and turn in into something delicious.
Oreos. A childhood classic, my relationship with those cookies go... a long way back. Back on my days when I didn't had any notion about nutrition and the impact of food in our bodies I used to run by cookies, breakfast, dinners and snacks (lunch was a regular meal, thankfully).
To be honest I don's miss any of those highly processed foods with all the recipes that I create (not to brag though! For real) although Catalina Crunch have great healthier chocolate sandwich cookies, HLTHY.LVNG_10 for discount!

So the "lasagna" sheets are nothing but a great lavash flat bread I recently tried and got instantly in love with it, the brand is Atoria's Family Bakery this and they are made with simple ingredients, low carb, and vegan friendly!
Overall the ingredients and the way to make this is so simple, and since it's a frozen recipe, makes it perfect for meal preps! I really enjoyed these as my afternoon snack/dessert. Super indulgent without all the sugar.
These are simple epic, such a good accident! Gluten free and low carb goodness, it won't make you miss the extra sugary ones that do cause inflammation! For the creamy filling I used... no surprise by now, ricotta cheese! It makes it so good guys, nice and creamy with a touch of keto maple syrup from Lakanto too.

Keto "Oreo" Lasagna

Serves 8
Ingredients
3 mini lavash flatbreads (I used these, vegan and low carb)
3 cups (400g) of ricotta cheese
1 tsp of cinnamon
1/4 cup of granulated monk fruit
1 tbsp of low carb maple syrup (PURELYHL for discount)
Toppings
1 pack of Super Fat Double Chocolate Cookies, finely ground (PURELYHL for discount)
Method
Preheat the your oven at 350.
Using a pizza cutter slice the lavash flatbread to fit a loaf baking dish.
Place the lavash bread previously cut to fit.
Bake for 12 minutes.
Blend the ricotta cheese, cinnamon, granulated monk fruit and keto maple syrup.
Let the lavash flatbread cool down.
Place one layer of the lavash bread in order to fit the loaf pan.
Pour about half of the ricotta filling.
Top with the rest of the lavash bread.
Top with the rest of the ricotta filling. Top with crushed cookies.
Freezer overnight.
Cut into eight pieces and enjoy!
