Serves 4


Ingredients

For the Paneer:

  • 1 block of paneer cheese

  • ½ tsp garlic powder

  • ⅛ tsp black pepper

  • 1 tsp sea salt

  • ½ cup unflavored whey protein (or flour)

  • ½ cup egg whites

  • 1 cup sourdough panko

For the Pear Glaze:

  • 1 cup Ceres Pear Juice

  • 2 tbsp miso paste

  • 1 tbsp granulated monk fruit

  • Juice of 1 lime

  • 1 tsp powdered ginger

  • 1 tbsp cornstarch

For Serving:

  • Dried green onion flakes

  • Red pepper flakes


Instructions

  1. Begin by cutting the paneer into bite-sized cubes.

  2. In one bowl, place the whey protein; in another, pour the egg whites. Set aside; you’ll need a third bowl for the panko.

  3. Dip each cube of paneer into the whey protein, then the egg whites, and finally coat them with panko.

  4. Arrange the coated paneer in an air fryer basket. Air fry for 20 minutes at 355°F, shaking the basket halfway through for even cooking.

  5. In a separate bowl, mix the miso paste, Ceres Pear Juice, monk fruit, lime juice, ginger, and cornstarch. Microwave for 1 minute and 30 seconds, then stir and heat for an additional 30 seconds. Allow the glaze to cool.
