Peachy Dreamy Mango Cake (Gluten Free & Low Carb)

The other day we receive a bunch of fresh peaches from one close friend from the family, the amount of peaches is totally unbelievable for only three of us... so I had a mission, to create loads of recipes using peaches and this one is a good one!


Summer calls for all the fruity and fun recipes and since we are taking advantage of all the freshness from the produce I decided to create a peachy, dense and flavorful cake using mango too!



About these Peachy Dreamy Mango Cake:

This cake is not only delicious but it's also extremely easy to make, you only need your blender and your oven, that's it! The cake batter is simple and dense, plus the frosting! Peachy and also made in the blender.



The cake batter is made with simple and wholesome ingredients: almond and coconut flour, granulated monk fruit, mango, greek yogurt and eggs. Everything to the blender till smooth and bake! You'll love how thick this cake is thanks to the use of coconut flour and the mango here.



Healthy and delicious cake? Yes please! Since this was a recipe that I made thanks to my dad's friend I decided to share a piece of the cake with him and if I'm completely honest my dad and him are just not into the healthy food life... It was a major win when they actually devour it and asked for seconds!



Mango, peaches and greek yogurt! A perfect combination of flavors and nutrients just in a delicious and sweet piece of cake. Plus we are also keeping it gluten free by using almond and coconut flour that will also provide healthy fats and fiber.

Peachy Dreamy Mango Cake

Serves 8 servings


Ingredients

For the cake

  • 1 cup of almond flour

  • 1/4 cup of coconut flour

  • 1/2 cup of granulated monk fruit

  • 1 cup of frozen mango

  • 1 tsp baking powder

  • 1 tsp of ginger powder

  • 1/2 cup of greek yogurt

  • 3 eggs

For the frosting


Method

  1. Preheat the oven at 350F.

  2. Add to the blender all the ingredients for the cake.

  3. Pour into a 9in. baking dish and bake for 24 minutes.

  4. Let the cake cool down.

  5. Blend all the ingredients for the frosting and top the cake once cooled.

  6. Cut into 8 slices and enjoy!
