Raspberry Lemon Vanilla Cake

Serves 6 slices


Ingredients

Lemon Filling & Frosting

  • 1 cup of powdered monk fruit 

  • ½ cup of greek yogurt

  • 1 pack of cream cheese (room temperature)

  • 2 tsp of vanilla extract

  • 1 tbsp of lemon juice

  • ⅓ cup of raspberries

Decoration 

  • Fresh Raspberries


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf or round cake pan.

  2. In a mixing bowl, combine the Vava Vanilla Dilettoso Mix with the rest of the ingredients for the cake.

  3. Fold in the raspberries.

  4. Pour the batter into your prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  5. Slice in half and let it cool down.

  6. Mix the ingredients for the frosting.

  7. Top one half the frosting top and raspberries, top with the other half and spread the rest of the frosting over the cake.

  8. Decorate with raspberries, slice and enjoy!
