Raspberry Pretzel Protein Cheesecake

Serves 1-3 servings
Ingredients
Cheesecake
1 1/2 cup of greek yogurt
2 tbsp of cornstarch
2 whole organic eggs
1 tsp of vanilla extract
1/2 cup of granulated monk fruit
1/4 cup of frozen raspberries
3 tbsp of crushed pretzels
Toppings
1/4 cup of raspberries
3 tbsp of crushed pretzels
1/4 cup of sugar-free glaze (powdered monk fruit mixed with almond milk)
Instructions
Preheat the oven at 350F.
Blend the ingredients for the cheesecake.
Pour over a baking dish and bake for 30-32 minutes.
Let it cool down.
Add the toppings and enjoy!
