Tacos en Nogada

Serves 6-8


Ingredients

For the Beef:

  • 2 lbs ground beef

  • 1/4 cup chopped onion

  • 1 tsp garlic powder

  • 1/2 tsp sea salt

  • 1/8 tsp black pepper

  • 1/4 tsp ground cinnamon

  • 1/8 tsp nutmeg

  • 1/4 tsp cumin

  • 1 chopped apple

  • 1 chopped peach

  • 1 cubed plantain

  • 1/4 cup sliced almonds

  • 2 roasted poblano peppers (seeded)

For the Nogada Sauce:

  • 1 cup of cream cheese (room temperature)

  • ⅔ cup of goat cheese

  • ⅔  cup organic sour cream

  • ½  cup of walnuts (soaked in water)

  • 1/8 tsp of cinnamon

  • 1/3 cup of organic whole milk

  • 1/2 tsp of sea saltt

To Serve:

  • Pomegranate seeds

  • Chopped parsley or cilantro

  • 8-10 Maria & Ricardo’s Organic White Flour Tortillas


Instructions

  1. Air fry the plantains at 350°F for 15-20 minutes until golden.

  2. Sauté chopped onion in a skillet with avocado oil spray for 2 minutes, then cook ground beef with salt, pepper, cinnamon, nutmeg, and garlic for 8-10 minutes until browned.

  3. Add the diced apple, peach, roasted poblano peppers, cooked plantain, and almonds. Stir well and cook for an additional 5 minutes to blend flavors.

  4. Blend all ingredients for the nogada sauce until smooth.

  5. Warm the Maria & Ricardo’s Organic White Flour Tortillas in a skillet for 30 seconds per side.

  6. Fill each tortilla with the beef mixture, drizzle with nogada sauce, and garnish with pomegranate seeds and chopped parsley.
