Thai Tea Chia Pudding

Serves 1
Ingredients
4 tablespoons Nutiva Organic Chia Seeds
2 tablespoons ground flaxseed
1 tablespoon Nutiva Hempseeds
1 scoop plant-based vanilla protein powder
1/4 teaspoon sea salt
1 teaspoon vanilla extract
1 cup brewed Thai tea
For Thai Tea:
4 black tea bags
1 cup boiling water
1 cup coconut milk
1/4 cup coconut cream (solid part)
1 teaspoon cinnamon
1/2 teaspoon turmeric
A pinch of ground clove
1 star anise
1/4 cup granulated monk fruit
Toppings:
Toasted unsweetened coconut
1 tablespoon Nutiva Coconut Manna
Crushed freeze-dried strawberries
Instructions
In a small pot, steep the tea bags along with the star anise in boiling water for 7 minutes. Remove and squeeze the tea bags to extract flavor, then add coconut milk, coconut cream, cinnamon, turmeric, ground clove, and monk fruit. Stir well and pour into a jar to cool.
In a mixing bowl, combine Nutiva Organic Chia Seeds, ground flaxseed, Nutiva Hempseeds, plant-based vanilla protein, sea salt, and vanilla extract. Add the cooled Thai tea mixture and stir until well combined. Let it sit overnight in the refrigerator or microwave for 1 minute and 30 seconds.
