There's just something special about lime desserts, it always reminds me of my mom's cookie key lime pie recipe thatjust takes me back to my childhood. A strange but just a combo that simply works. In this occasion I'm making my own amazing version that hopefully you'll also love!


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly lime jell dessert, low carb shortbread cookies and white chocolate. A great protein snack to fuel your body. Delicious, keto friendly and gluten free protein key lime pie cookie no bake bars!

We are showing some love to all my key lime lovers... so underrated sometimes! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some greek yogurt and low carb vanilla pea protein as our base that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Nuzest Vanilla Pea Protein, the ingredients are simple, low carb and vegan... plus the taste is just delicious.

White Chocolate Key Lime Pie Cookie Bars

Serves 4 servings


Ingredients

Base

Filling

Toppings

  • 12 low carb shortbread cookies

  • 1/4 cup (90g) of melted white chocolate (used Let's Bake Believe)


Method

  1. Mix all the dry ingredients of the base and transfer into for small (individual) loaf containers.

  2. Mix the ingredients for the filling and pour over the base equally.

  3. Add the cookies on top and freeze overnight.

  4. Drizzle melted white chocolate wafers, freezer a couple of minutes.

  5. Enjoy!
