White Chocolate Macadamia Banana Bread

Serves 6-8 pieces


Ingredients

  • 1 cup of gluten-free flour

  • 1/4 tsp of baking salt

  • 2/3 of RxSugar alullose (MARIA20 for discount)

  • 2 eggs

  • 2 bananas

  • 1/2 cup of vanilla greek yogurt

  • 1 tsp of vanilla extract

  • 1/2 cup of unsweetened almond milk

  • 2 tbsp of crushed cup of macadamia

  • 2 tbsp of chopped sugar-free white chocolate

  • 1/2 pack of Fruit for Thought Dried Pineapple

Toppings

  • 2 tbsp of crushed cup of macadamia

  • 2 tbsp of chopped sugar-free white chocolate

  • 1/2 pack of Fruit for Thought Dried Pineapple


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients in a bowl.

  3. Place the bananas in a bowl and microwave for 1:30 minutes.

  4. Add the eggs, vanilla extract, bananas and greek yogurt and almond milk, mix well with the dry ingredients.

  5. Add in the macadamia nuts, white chocolate and pineapple.

  6. Transfer the batter into a silicone loaf baking dish.

  7. Add your toppings.

  8. Bake for 35-40 minutes and let them cool down.

  9. Let it cool down, slice and enjoy!
