Blueberry Banana Cheesecake Upside Down Puff Pastry

Serves 1
Ingredients
1 defrosted puff pastry sheet
1 large banana
4 tbsp of honey
1/2 cup of whipped cream cheese
3 tbsp of powdered monk fruit
1 tsp of vanilla extract
1/2 cup St. Dalfour Blueberry Fruit Spread Check it out here
1 whole egg (whisked)
Additional powdered monk fruit for topping
Instructions
Preheat the oven to 400F.
Slice the banana into 4 pieces.
Mix the cream cheese, vanilla and powdered monk fruit. Set aside.
Roll your puff pastry down and slice into 6 rectangles.
On a silicone baking mat, over a large sheet pan place 1 tbsp of honey in 4 points.
Place a slice of a banana over the honey, add a dollop of St. Dalfour Blueberry Fruit Spread and cream cheese mix.
Place one piece of the puff pastry over each blueberry cheesecake mix on the baking mat.
Press the edges with a fork, brush with egg and bake for 12-14 minutes.
Let them cool down and sprinkle some powdered monk fruit over the blueberry cheesecake layer and enjoy!
