Serves 10 popsicles


Ingredients

Blueberry Layer  

  • 2/3 cup blueberries

  • 2/3 cup Greek yogurt (or coconut yogurt)

  • 1/3 cup Hey Elavi Vanilla Superfood Cashew Butter (PHL for discount)

  • 1/4 cup monk fruit sweetener

  • 3/4 cup unsweetened almond milk

Matcha Layer  

  • 1/2 cup Greek yogurt (or coconut yogurt)

  • 1/4 cup unsweetened almond milk

  • 1 tsp vanilla extract

  • 1/4 cup monk fruit sweetener

  • 1 tbsp matcha powder

Coating  

  • 1 cup sugar-free white chocolate

  • 1 tbsp coconut oil

  • 2 tbsp freeze-dried strawberries


Instructions

  1. Fill silicone molds with the popsicle mixture.

  2. Combine all blueberry layer ingredients, blending until smooth.

  3. Mix the matcha layer ingredients until uniform.

  4. Pour the blueberry mixture into the molds first, then add the matcha layer on top.

  5. Insert popsicle sticks, cover, and freeze overnight.

  6. Melt sugar-free white chocolate with coconut oil, then decorate the frozen popsicles. Top with freeze-dried strawberries before serving.
