When I think of a comfort food it definitely bring some recipes that my mom used to make; overall recipes that bring some memories but I can also think about anything saucy and creamy, do you feel the same way about comfort foods?


Well, whether you think about comfort foods that way or not, this recipe is simple and comforting in the sense of flavor and consistency. This Broccoli Cream Cheese Chicken Skillet is just a winner in those matters, stick around for the goods!



The combination of flavors is are just going to delight your taste buds in so many levels, just a few words will be needed here; cream cheese and bacon. No need for more!



This is a simple recipe that can be great for your next weekly meal prep since it's easy to cut into slices and place them in different containers, your next friends or family gathering, a romantic date night, or a solo date with yourself... this chicken skillet is just a must try!



When it comes to create healthy recipes I'm all about getting quality ingredients and keeping it simple. I probably think that most of us will think that cream cheese and bacon are now way healthy but listen to me, I'm a nutritionist. Quality first!



In this recipe I used organic cream cheese, the only ingredient is the container are; organic pasteurized cream, organic pasteurized non-fat milk, salt and lactic cultures. So this is not only super simple, it also contains healthy probiotics that will feed your gut.



And bacon. Bacon is a tricky one too but it's easy to get a healthy version, I have been using Pederson's for years (not sponsored) because their quality is amazing; from the source to the simple ingredients.



Overall here are the ingredients that we'll use for this recipe:

  • Shredded chicken

  • Organic cream cheese

  • Egg whites

  • Broccoli

  • Mushrooms

  • Sugar-free bacon (I used Pederson's)

  • Sea salt

  • Garlic

  • Black pepper



Here are some personal and no brainer tips that might be helpful and that will also make eating healthier easier for you!

  • Prep skillet and casseroles for the week

  • Stock your freezer with cooked and raw proteins; I usually have chicken breasts, salmon, ground meats and cooked shredded chicken.

  • But chopped veggies; I get the Costco size to have them with all my meals.



You can see that that eating healthy shouldn't be boring or complicated! This recipe is just a proof and a recipe that you might want to keep... and make on repeat! Like I did on my house, we loved it! For dinner or lunch!

Broccoli Cream Cheese Chicken Skillet

Serves 8


Ingredients

  • 2 cups of shredded chicken

  • 4 oz. of organic cream cheese (room temperature)

  • 1/2 cup of egg whites

  • 1 cup of chopped broccoli

  • 1 cup of raw sliced mushrooms

  • 2 slices of sugar-free bacon (I used Pederson's)

  • 1 tsp of sea salt

  • 1/2 tsp of dried garlic

  • 1/8 tsp of black pepper


Method

  1. Preheat the oven at 350F.

  2. Bake bacon for 10 minutes (it doesn't need to be fully cooked).

  3. Mix egg whites, chicken, seasonings and cream cheese room temperature.

  4. In a non-stick skillet cook the broccoli and mushrooms.

  5. Add the vegetables into the chicken mix.

  6. Pour the mix into a greased iron skillet.

  7. Top with bacon.

  8. Bake for 30 minutes.

  9. Let it cool down and cut into 8 equal squares.

  10. ENJOY!
