Candied Pecan-Almond Pies (Low Carb & Gluten Free)

Prepare yourself, this recipe just made me nuts and I couldn't resist that pun. But for real, this recipe is literally will blow your mind and make your tastebuds very happy and satisfied, keto friendly and no gluten necessary!


There's always a good point of the day to have a chocolate recipe, don't you agree? It's just something phenomenal that goes along at any time of the day whether it's on dessert, breakfast and even some savory recipes.



About these Candied Pecan-Almond Pies:

Yep, you've heard it here first kids. Or at least that's what I want to think about since this recipe came out from the inspiration of my pantry and what to create next for the blog. Saw these keto candied pecans, then my keto chocolate cookies and then these chocolate covered almonds... the ideas was just there screaming at me!



For the base of this recipe I used a mix of keto chocolate cookies, one the ones I used were from Super Fat, these cookies are just a great gluten free and keto certified option to have on hand. I have actually used them to create one of my favorite and iconic ideas:



This is simply a major combo that you cannot resist, hard to believe that this is also low carb! Plus , besides being insanely delicious, these bad boys are packed with those healthy fats from our almonds and pecans. So that also makes it a double winner!



The perfect afternoon snack, dessert or companion to your latte or tea, no matter if you are with a picky eater! This is a delicious, sweet, fun and nutrient dense fun recipe that might be on repeat all summer long!


For the keto candied pecans and the collagen I used Marigold, a company that I trust and love with all my heart thanks for their transparency, values and amazing products. I love their keto pecans, because as the names says it all, these are keto!

The chocolate covered almonds that I used in this recipe were from Lakanto, these are sweetened with my favorite sweetener, AKA, monk fruit so these are also a great option for anytone following a low carb, keto diet!

These are super easy to make, the taste of the chocolate creamy filling from the ricotta cheese, along with the crunch of the keto pecans and chocolate covered almonds is just out of this world.


The base is just the perfect combination without getting too too sweet, just the perfect sweetness, don't worry. These will be great for all my chocolate and nut heads out there! Easy peasy and extremely delicious.

Candied Pecan-Almond Pies

Method

  1. Mix the ingredients for the base and divide the dough into twelve silicone muffin cups. Freeze for 30 minutes.

  2. Blend the candied pecans till you get a flour texture and set aside.

  3. Blend the ricotta cheese with monk fruit until creamy and mix with the candied pecans.

  4. Pour the mix on top of each chocolate base that you just placed in the freezer.

  5. Add the covered almonds and sprinkles as topping.

  6. Freeze for 4 hours or overnight and enjoy!
