Serves 10 truffles


Ingredients

Base  

Ricotta Filling  

Caramel Apple Topping  

  • 2 Granny Smith apples, chopped

  • 3 sugar-free caramel pieces, chopped

  • ⅓ cup sugar-free maple syrup

  • 1 teaspoon cinnamon

  • 3 tablespoons cornstarch


Instructions

  1. Preheat your oven to 350°F.

  2. In a bowl, combine the baking mix and banana, then press evenly into an 8x8 baking dish. Bake for 13 minutes to create your crust.

  3. In a separate bowl, blend ricotta, eggs, vanilla, baking mix, and monk fruit until smooth. Pour over the baked crust and bake for an additional 33-35 minutes.

  4. Allow the bars to cool. Meanwhile, mix apple, caramel, maple syrup, cinnamon, and cornstarch in a microwave-safe bowl. Microwave for 2 minutes until thickened.

  5. Spread the caramel apple topping over the cooled bars, slice into nine pieces, and serve.
