Ingredients

  • Dry Ingredients:

    • 1¾ cups gluten-free flour

    • 1 tsp baking powder

    • 1 tsp baking soda

    • ¼ tsp sea salt

    • 2 tsp cinnamon

    • Dash of clove and cardamom

  • Wet Ingredients:

    • 1 tbsp Nielsen-Massey Premium Madagascar Bourbon pure vanilla bean paste

    • 2 whole eggs

    • 1 cup shredded carrots

    • ½ cup organic sour cream (or Greek yogurt)

    • ⅔ cup granulated monk fruit

    • ½ cup crushed pecans

    • ¼ cup unsweetened shredded coconut

Vanilla Bean Filling & Frosting

  • 1 cup powdered monk fruit

  • 1 tbsp Nielsen-Massey Premium Madagascar Bourbon pure vanilla bean paste

  • 2 tbsp milk
