Serves 9-12


Ingredients

Vanilla Cake

  • 1½ cups gluten-free flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • A pinch of kosher salt

  • ⅔ cup granulated monk fruit

  • 2 organic eggs

  • ½ cup vanilla Greek yogurt

  • 1 cup unsweetened nut milk

Chai Tres Leches Mix

  • 1 cup milk

  • ½ cup water

  • 4 tbsp milk powder

  • 1 tsp vanilla extract

  • 3 chai tea bags

  • ⅔ cup low-sugar condensed milk

Topping

  • Coconut whipped cream

  • Brown granulated monk fruit


Instructions

  1. Preheat your oven to 350°F.

  2. Mix all dry ingredients for the cake in a bowl, then add wet ingredients and blend until smooth.

  3. Pour batter into a medium baking dish and bake for 38-40 minutes, or until a toothpick comes out clean.

  4. Steep the chai tea bags in hot water.

  5. While the cake cools, blend ingredients for the tres leches mixture.
