Cherry Coconut Carrot Bread

Serves 6 slices
Ingredients
1 pack of Bake Me Healthy Carrot Cake & Muffin Baking Mix
1 cup of unsweetened almond milk
1/3 cup coconut yogurt (or oil)
1 cup of chopped cherries
Coconut Glaze
3/4 cup of powdered monk fruit
2-4 tbsp of unsweetened almond milk
1/4 cup of unsweetened shredded coconut
Instructions
Preheat the oven at 350F.
Mix all the ingredients for the carrot bread.
Transfer the batter into a silicone loaf baking dish.
Bake for 25—28 minutes and let them cool down.
Mix the ingredients for the coconut glaze.
Let it cool down, and add the coconut glaze.
Slice into 6-8 slices and enjoy!
