Chocolate Candied Pecan Caramel Loaves (Gluten Free & Low Sugar)

What a time of the year! One of my favorite ones for the main reason that it's all about baked goods, warm and spiced flavors and sharing... in this occasion I baked these gluten free loaves using organic One Degree sprouted oats to surprise some of my friends that I was going to see on a coffee shop.


These turned out so fluffy, plus the chocolate caramel combo is perfect for this holiday season! Just the perfect snack or dessert, contains plenty of fiber and without all the sugar since we are using alullose instead of cane sugar.



About these Chocolate Candied Pecan Caramel Loaves:

I kept it simple and very convenient. I used sprouted and organic oats from One Degree as the base for this recipe, I think that oats really add a great texture to baked goods, have you thought of that? Plus the type of fiber makes these loaves fluffy!


Chocolate recipes are good enough on its own... add some caramel and keto candied pecans for that extra pump of goodness! A delicious loaf recipe using some chocolate ghee, keto candied pecans and caramel coffee creamer, and yes! All gluten free and low in sugar!



I also added some plant based protein in vanilla flavor it add some volume, flavor and nutrient density, in this recipe it didn't blend completely with the rest of the ingredients so there were some parts that really reminded me of the cookies!




The combination of the caramel keto coffee creamer and the candied pecans is just the best, can't get any better! Plus we are keeping it low sugar and gluten free... nobody will tell these are healthy, so test these with the pickiest eater!


Plus the flavor of the melted chocolate ghee along with the hint of cinnamon really amps up the flavors here.


The perfect afternoon snack or dessert no matter the season! I'm a firm believer that having a good snack pcked with fiber and healthy fats is always a good idea, and these loaves are just the perfect recipe to have on hand and ready to prepare no matter how much time you've got.



Overall, these are the ingredients needed for these Chocolate Candied Pecan Caramel Loaves:

  • One Degree Gluten Free Sprouted Oats

  • Low Carb Flour (almond flour or coconut works)

  • Danish Cookie Fat Bombs (used Marigold)

  • Cinnamon

  • Cardamom

  • Baking soda

  • Eggs

  • Chocolate Melted Ghee

  • Caramel Keto Coffee Creamer

  • Apple Cider Vinegar

  • Alullose

  • Keto Candied Pecans (used Marigold)


You can see that the ingredients are pretty basic, and the method is the easiest thing to do! And made with better-for-you such as alullose instead of refined sugars, almond flour and sported organic oats instead of refined flours that won't provide nutrients.


For the toppings I decided to use some keto candied pecans from Marigold! Thy will add a great flavor, add seasonal vibe to this while not adding sugar at all since they use stevia to add that sweetness.



To keep everything low carb I used my favorite sweetener that replace sugar (1:1) at the moment, this alullose, based from foods but no calroies at all from Rx Sugar, this is a great keto friendly and diabetic option for all my sweet pies out there.

The end result

Fluffy and nutty! These were so fluffy and super flavorful, I think that the crushed fat combs here really added a great touch to the load dough that goes so well with the crunch of the keto candied pecans. Hard to even realize these are low sugar, gluten free and healthy.


And this is also a gut friendly option because of the sprouted and organic oats from One Degree. The fiber from the oats is also a great way to nourish our gut bacteria... so this is a double win: flavorful and nourishing!



These are great to meal prep, who also loves having their healthy sweets on hand for any occasion? Ready to attack that sweet tooth. I actually froze one batch of this recipe to experiment and it turned out amazing... so you can even prepare this recipe ahead of time and keep it in the freezer or refrigerator.

Chocolate Candied Pecan Caramel Loaves

Serves 4-8 serving


Ingredients

Loaf

  • 1 cup of low carb flour (almond flour or coconut works)

  • 1/3 cup of One Degree Gluten Free Sprouted Oats

  • 2 crushed danish cookie fat bombs (used Marigold)

  • 1 tsp of cinnamon

  • Dash of cardamom

  • 1 tsp of baking soda

  • 3 eggs

  • 1/4 cup of chocolate melted ghee

  • 3 tbsp of caramel keto coffee creamer

  • 1 tsp of apple cider vinegar

  • 1/3 cup of alullose

Toppings

  • 1/2 cup of keto candied pecans (used Marigold)


Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the loafs.

  3. Add the melted ghee, keto creamer and eggs, mix well.

  4. Pour the mix in 4 small baking loaf pans (used Souper Cubes).

  5. Top with candied pecans.

  6. Bake for 20 minutes.

  7. Let them cool down and enjoy!
