Chocolate Cowboy Cookies

Serves 10


Ingredients

  • 1 1/2 cups Prozis Protein Pancake Mix in Chocolate Hazelnut flavor ("PURELYHL" for discount)

  • 1/3 cup of oats

  • 1 cup of protein cereal (used Premier Protein)

  • 1/3 cup of shredded coconut

  • 3/4 cup of alullose or monk fruit

  • 1/2 tsp of baking soda

  • 1 1/3 cup of greek yogurt

  • 3 tsp of vanilla extract

  • 1/2 cup of pumpkin puree

  • 2 whole eggs

  • 1/2 tsp of apple cider vinegar

  • 1/4 cup of sugar-free chocolate chips

Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients.

  3. Add the rest of the ingredients and mix well.

  4. Create 10 large cookies and place them in a baking dish.

  5. Bake for 10-12 minutes, let it cool down and enjoy!
