Extra Moist Upside Down Peach Cake

Serves 8 slices


Ingredients

  • ½ cup Best Foods Real Mayonnaise

  • ¾ cup of granulated monk sugar

  • 2 eggs

  • 2 tsp of vanilla extract

  • 1 ½  cups gluten-free flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • ½ cup coconut milk

  • 2 sliced peaches

  • ⅓ cup of raspberries


Instructions

  1. Wash and slice the peaches in wedges and air fry them for 12 minutes at 350F.

  2. Slightly cover the bottom of a 9-inch cake pan with nonstick spray. Preheat your oven to 350F. 

  3. Mix the dry ingredients for the cake.

  4. Add in the eggs, Best Foods Real Mayonnaise, coconut milk, vanilla extract and egg into the dry mix and stir until fully incorporated.

  5. Take half of one peach and chop them, add them into the cake batter.

  6. Place the rest of the peaches on the bottom of the cake pan, add the raspberries.

  7. Top with cake batter and bake for 35-40 minutes.

  8. Let it cool down completely, remove extra cake topping, flip carefully into a plate, top with crumbled extra cake that you removed.

  9. Slice and enjoy!
