Ginger Honey Coconut Bread

Serves 6-8 slices


Ingredients

  • 1 cup + 2 tbsp (100g) cups of gluten-free pancake mix

  • 4 scoops (Nuzest Vegan Vanilla Protein (PURELYHL for discount)

  • 1 tsp of cinnamon

  • 1 tsp of baking powder

  • 2 whole eggs

  • 1 tsp of vanilla extract

  • 3/4 cup of vanilla greek yogurt

  • 1 tbsp of apple cider vinegar

  • 1/4 cup of almond butter

Toppings (optional)

  • 1 tbsp of unsweetened shredded coconut

  • 2 chopped organic ginger honey drops

Instructions

  1. Preheat the oven at 350F.

  2. Mix the greek yogurt with apple cider vinegar, set aside.

  3. Mix all the dry ingredients.

  4. Incorporate the almond butter, greek yogurt, vanilla extract, eggs, and mix well.

  5. Transfer to a silicone baking loaf mold.

  6. Add the toppings.

  7. Bake for 35 minutes and let it cool, add the toppings and enjoy!
