The season of guavas is here I'm super excited to be sharing some recipes with you, one that I wanted to try already is a guava cheesecake recipe, but in this occasion this will be a a high protein, gluten free and vegan recipe... the creaminess is so real and it's just so so good!
The combination of flavors, plus the consistency of these is just a whole new level and perfect for any occasion or time of the year! These are also great for meal prep since you can keep them in the freezer or to simply share with your nut health friends.

So the base of these pies is made by Scotty's Keto and Vegan Friendly Pizza Mix, super convenient that i mused with some peanut butter and ground flaxseed. This base turned out super fluffy and the filling is also super easy to make and without the need to soak your cashews overnight.
The trick to make these extra creamy is on using the right protein powder, in this occasion I use on repeat Nuzest Protein, also plant-based, low carb and with minimal ingredients. It has a great taste; not chalky, funky or anything like that. This is why it's important to use the correct protein powder.
I also included one of their Nuzest Bar in Vanilla Almond... the perfect delish toppings, their bars are super chewy and just the perfect topping!
The key is also in the liquid content! You might need more if you are using protein powder since in this occasion, it's made from pea protein and it might absorb more water in the baking process, we want to avoid any dryness.
In the pie mix we are simply using unsweetened almond milk, cashews, protein powder and alullose... they turned out to be loaded and creamy!
One of the best parts of using protein powder is that also adds flavor and thickness to the recipe; it's really a game changer, honestly! In this occasion I used the vanilla one, but the guava will have a extra fun effect on the recipe too!

Thick, coconutty and soft! These are just a tropical dream in a blondie! The flavor of guava along with the vanilla protein here is just dreamy and irresistible. The crust is soft and chewy and just the perfect cup for the creamy and silky cashew cheesecake.
The protein really adds a higher thickness to the cashew filling, you can also add some more guavas if you'll like but for me it was just the perfect flavor, guavas are actually very flavorful and aromatic so a few goes a long way!
Melts in your mouth! And it's super satisfying, hard to tell these cheesecakes are vegan... simply irresistible! My boyfriend devour these, even though I didn't want t o share this, for you sharing can be optional!
You might want to save this recipe because a second batch might be needed here! I shared some of the blondies with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.
Pro tip: Add some extra cashews on top to make them look prettier.

Guava Vegan Protein Cheesecakes

Serves 12 servings
Ingredients
Base
1/2 pack of Scotty's Keto and Vegan Friendly Pizza Mix
3/4 cup of hot water
1/4 cup of peanut butter
1/4 cup of ground flaxseed
1/3 cup of alullose
Cheesecake Filling
2 cups of Keto Sweet & Salty Cashews (I used Marigold - PURELYHL for discount)
1 cup of unsweetened almond milk
2 scoops Nuzest Vanilla Protein Powder (PURELYHL for discount)
3 guavas (without the seeds)
1/3 cup of alullose
Toppings

Nuzest Bar in Vanilla Almond
Method
Preheat the oven at 350F.
Mix the dry ingredients for the base, then add the hot water, peanut butter and stir well.
Transfer the dough into 12 silicone muffin cups and using your hands create little cheesecake bases.
Bake for 10-12 minutes.
Blend the almond milk, cashews and guavas.
Pour into a mixing bowl and stir in with protein and alullose.
Add the cheesecake base into each little pie.
Refrigerate a few minutes.
Enjoy!
