Keto Pizza "Cannolis" (Gluten Free)

I think that my excellence Italian and Mexican food are my top comfort foods, this might be by the cheesiness or sauciness from their recipes that just makes my soul extra happy! This recipe is inspired by one of my comfort foods, pizza and cannolis! All in a delicious, gluten free and low carb version that you are going to love!


There's something about pizza sauce, fresh basil and cheese that instantly creates a magical and delicious recipe! And since I had some keto carb egg wraps I needed to make an epic recipe... a comfort food for the soul.



About these Keto Pizza "Cannolis":

This is extremely easy to make and extremely flavorful! The ingredients are also super basic and probably a list of ingredients you've already got in your pantry; pizza or marinara sauce, cheese and for the crispy factor I'm using crushed pork rinds.


The pork rinds, in this recipe work for the coating of the cannolis and make them extra crispy along with some eggs what will work as our glue. You can get them at the store or you can crush some classic pork rinds (I try to stick to humanely raised pork) or you can also simply use almond flour to keep this recipe low carb and gluten free.



What's in these Keto Pizza "Cannolis"?

As I mentioned earlier, I used a pork rind panko, pizza sauce with no sugar added, egg for the coating, cheese, seasonings and of course our main ingredient, egg wraps! The seasonings included in this recipe are real salt, black pepper, garlic powder and some fresh basil from my garden.


Keeping it nice, delicious and low carb! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste.


For the no sugar added pizza sauce I used Otamot, love it because it's made with simple and wholesome ingredients. Just the perfect sauce to create your favorite recipes! And for the egg wraps I used Crepini that you can found at their website or Costco.

Overall, these are the ingredients needed for these Keto Pizza "Cannolis":

  • Egg Wraps (I used Crepini)

  • Pizza Sauce No Sugar Added (used Otamot)

These were great as a snack, side dish and even as a vegetarian salad if you switch the pork rinds to almond flour! Remember to keep ingredients wholesome and pick wisely! I love having marinara or this pizza sauce, with no sugar added on my pantry just because it goes so well in so many recipes, this is a clear example!

By using and healthy and wholesome pizza sauce you increase the nutritional value of the recipe! From the tomatoes you'll get plenty vitamin C, lycopene (antioxidant) and fiber from the sauce overall.


And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.


Fresh herbs are also a game changer when it comes to your recipes, it makes even more gourmet and special! In this occasion I added some fresh basil leaves from my garden.

The end result

These are easy to make, cheesy, flavorful and so addicting! I'm obsessed, and since I have always been a fan of pizza sauce, fresh basil, ricotta cheese and basil... all together is just a pleasant experience.


Thanks to the egg and baking (or in this case, I air fried mine) method the cannolis turned out being crispy and easy to cut, not dry thanks to the toppings and ricotta cheese filling... so flavorful! The touch of fresh basil is just PERFECT *chefs kiss*, it just makes it even more elegant while also being such an effortless recipe!


I enjoyed mine for dinner or lunch, alone and by the forkful as a snack! A recipe worth making again no matter the season, while watching movies or to give them to the kiddos as a fun snack! At the end it's hard to resist these cheesy, wraps covered in a healthy pizza sauce, double points for this being nourishing!



Not boring or complicated! This are a great lunch for kids and grown ups, hard to resist a cheesy and recipe inspired by one of our Italian favorites, pizza and cannolis.

Keto Pizza "Cannolis"

Serves 2-5 servings


Ingredients

  • 5 egg wraps (I used Crepini)

  • 1/2 cup of marinara sauce no sugar added (used Otamot)

  • 1/2 cup of crushed pork panko

  • 2 eggs

  • 1/8 tsp black pepper

  • 1/8 tsp of real salt

  • 1/8 tsp of garlic

Filling

  • 1/2 cup of ricotta cheese

  • salt and pepper to taste

  • 1 tsp of parmesan cheese

  • 1 tbsp of nutritional yeast

Toppings

  • A bunch of fresh basil leaves

  • Parmesan cheese


Method

  1. Preheat the oven at 380F (same for air fryer)

  2. Place the egg wraps flat in a plate and add part of the ricotta mix filling.

  3. Wrap by folding the horizontal edges and roll in to create that burrito or cannoli form.

  4. Repeat this step with the rest of the wraps and mix.

  5. Dip each roll in seasoned and whisked eggs and then roll them in the pork panko.

  6. Place them in a baking or air fryer tray and bake or air fry for 8 minutes.

  7. Once cooled place them in a plate, add the pizza sauce, parmesan cheese and basil leaves.

  8. Serve and enjoy!
