This recipe is perfect no matter the occasion but I wanted to add a little fun twist by using dairy-free queso, kimchi and some rice paper wrappers.

As I mentioned earlier, chicken, dairy-free queso, kimchi, all wrapped in rice paper wrappers, which are super versatile and made with just simple ingredients, perfect for your sweet and savory recipes, this one for sure! The seasonings included in this recipe are real salt, black pepper and garlic powder, for topping some, dairy-free plain yogurt, cilantro and red onion.

This are easy to make, moist, flavorful and so addicting! I'm obsessed, and since I have always been a fan of spring rolls recipes with the kick of queso and the touch of kimchi, all in wrapped in a rice paper roll, this recipe is definitely a winner!

Kimchi Queso Chicken Spring Rolls

Serves 3-4 rolls


Ingredients

  • 1 cup of shredded chicken

  • 1/2 cup of kimchi (no juice)

  • 1/4 cup of dairy-free queso

  • 1/2 tsp of sea salt

  • 1 tsp of garlic

  • 1/8 tsp of black pepper

  • 4 rice paper wrappers

To Serve

  • Dairy-Free Plain Yogurt

  • Cilantro

  • Chopped Red Onion


Method

  1. Mix all the ingredients for the chicken.

  2. Soak the rice paper in water for 30 seconds or less.

  3. Stuff them with part of the chicken and roll them like a burrito.

  4. Air fry for 10-12 minutes and serve with toppings.
