Serves 4-6


Ingredients

  • 1 lb lean organic ground beef

  • 2 teaspoons taco seasoning

  • 1/3 cup enchilada sauce

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon sea salt

  • 1 bag tater tots

  • 1 slice jalapeño

  • 1/4 cup chopped roasted red onion

  • 1/3 cup corn

  • 1/4 cup chopped cilantro

  • 1/2 cup sliced tomatoes

  • 1 tablespoon red pepper flakes

  • 1/4 cup sour cream

  • 1 pack Sonoma Smoked Hot Pepper Jack Cheese (or visit Sonoma Cheese)


Instructions

  1. Preheat your oven to 350°F.

  2. Spread the tater tots and sliced jalapeños on a baking sheet and bake for 16 minutes.

  3. Meanwhile, cook the ground beef with taco seasoning, enchilada sauce, garlic, and salt in a skillet for 8-10 minutes until fully cooked. Set aside.
