This is extremely easy to make and extremely flavorful! The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to add a little fun twist by using pickled jalapeños, eggplant as our base and some low carb panko for that crisp.

Pepperoni Jalapeño Eggplant Pizza

Serves 1-2 serving


Ingredients

  • 1 large eggplant

  • 1 tsp of garlic

  • 1/8 tsp of black pepper

  • 1/8 tsp of sea salt

  • 1/4 cup of low-carb panko

  • 1/3 cup of sugar-free marinara sauce (used otamot or 356 Whole Foods Brand)

  • 4-6 slices of apple gate turkey bacon

  • 2 slices of baby bel cheese

  • 2 tbsp of pickles jalapeños

  • 2 tsp of chopped red onion


Instructions

  1. Slice the eggplant, brush a little of the marinara sauce and add the seasonings. Coat with panko.

  2. Air fry for 20 minutes at 350F.

  3. Add the cheese and rest of the ingredients.

  4. Air fry for 8 minutes at 385F.

  5. Enjoy!
