Raspberry Lemon Protein Cookies

Serves 10 cookies
Ingredients
1⅔ cups all-purpose flour
1 tbsp cornstarch
1 tbsp lemon zest
1 tsp baking soda
1 tsp baking powder
½ cup brown granulated monk fruit sweetener
½ cup granulated monk fruit sweetener
1 tbsp vanilla extract
¾ cup softened ghee (or butter)
2 tbsp milk
1 whole egg
For the Coating:
⅔ cup brown granulated monk fruit sweetener
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
In a large bowl, whisk together all dry cookie ingredients except for the raspberry jel.
Add in ghee, egg, vanilla, and milk. Mix until a smooth dough forms.
Divide dough evenly into two bowls. Mix the raspberry jel into one half, then swirl both doughs together without fully combining to achieve a marbled effect.
Scoop and roll pieces of dough into balls, coat with brown monk fruit sweetener, and place on prepared baking sheet.
Gently press to shape cookies. Bake for 13-14 minutes, until edges are slightly golden but centers remain chewy.
