Ricotta Stuffed Strawberry Cookies

Serves 8
Ingredients
1 1/2 cups Dilettoso Va Vanilla Mix
1 tsp baking powder
1/2 cup coconut oil
2 large organic eggs
1 tsp vanilla extract
Pinch of sea salt
1/2 cup crushed freeze-dried strawberries
For the Filling
1 cup ricotta cheese
2/3 cup powdered monk fruit
1 tsp vanilla extract
Pinch of sea salt
Decoration: crushed freeze-dried strawberries & crushed gluten-free cookies
Instructions
Preheat the oven to 350°F (175°C); line a baking sheet with parchment.
Mix Dilettoso Va Vanilla Mix, baking powder, and sea salt in a bowl.
Blend in coconut oil, eggs, and vanilla until a dough forms.
Form 8 cookie balls on the baking sheet, creating a well in the center for filling.
Bake for 10-11 minutes until edges are golden. Cool on a rack and press the centers down again.
In a bowl, beat the ricotta, monk fruit, vanilla, and salt until smooth.
Stuff each cookie with the ricotta filling, then top with crushed strawberries and cookies.
