Strawberry Chard Corn Salad

Serves 5


Ingredients

For the Dressing:  

  • 1/4 cup Nutiva Avocado Oil

  • 2 tbsp tahini

  • 1 tbsp apple cider vinegar

  • Juice of 1 lime

  • 1 tsp monk fruit sweetener

For the Salad:  

  • 1 tbsp Nutiva Avocado Oil

  • 2 cups fresh corn kernels

  • 1 finely chopped jalapeño

  • 2 cups sliced strawberries

  • 1/4 cup chopped cilantro

  • 1 sliced avocado


Instructions

  1. Whisk together the dressing ingredients in a bowl and set aside.

  2. Heat 1 tbsp of Nutiva Avocado Oil in a skillet over medium heat; add corn with the chopped jalapeño and cook until slightly charred, about 5-6 minutes.

  3. Toss the cooked corn with the chopped strawberries, cilantro, sliced avocado, and the dressing.

  4. Enjoy with chips!.
