Strawberry Cookies N' Creme Froyo (Low Carb & Gluten Free)

Guys, I just can't get over this recipe. I turned out better than I was expected and this makes extra happy about writing this blogpost, I was thinking of making a ice cream recipe and lately I have been all about strawberries and cookies... here's the result.

This recipe doesn't require any ice cream maker, you just need your blender and the simple gut friendly ingredients that we are going to use. Basic, simple and extremely good that will rock your world in just a few seconds.

This is a simple, quick and single serving recipe. Perfect for a summer afternoon or a Friday night in of watching movies or your favorite serie. This is a recipe based on greek yogurt, here for some probiotics, and that thickness of this recipe is from adding some fiber.

This froyo gut friendly, low carb and gluten free.

I also added some plant based protein in vanilla flavor it add some volume, flavor and nutrient density, in this recipe it didn't blend completely with the rest of the ingredients so there were some parts that really reminded me of the cookies!

For this recipe I'm using two tablespoon (two servings).

To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

  1. In a food processor or blender add the greek yogurt, fiber supplement, monk fruit, plant based protein and strawberries and blend until smooth.
