Ingredients

  • Blondie Layer:

    • 1 cup Dilettoso Va Vanilla Amore Baking Mix

    • 1 tablespoon instant coffee

    • 1 teaspoon baking soda

    • 1 teaspoon baking powder

    • ½ teaspoon sea salt

    • 1 tablespoon vanilla extract

    • 2/3 cup organic Greek yogurt

    • 1 organic egg

    Lady Finger Layer:

    • 1 cup eggnog

    • 10-12 lady finger cookies

    Cream Layer:

    • 1 cup ricotta cheese (or mascarpone)

    • 2 tablespoons cornstarch

    • ½ cup granulated monk fruit

    • 2 teaspoons vanilla extract

    • 1 teaspoon almond extract

    Topping:

    • Christmas sprinkles


Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the blondie dry ingredients; then add the wet ingredients and mix until well combined. Pour the mixture into a silicone 8x8 baking dish.

  3. Bake for 22-25 minutes, or until a toothpick inserted comes out clean.

  4. In a separate bowl, blend the ingredients for the cream layer until smooth.

  5. Once the blondies are baked and cooled, gently soak each lady finger in the eggnog.
