Ingredients

  • Pretzel Base:

    Cheesecake Layer:

    • 1 cup cottage cheese

    • 1 tablespoon vanilla sugar-free pudding

    • 1/2 cup peanut butter powder

    • 4 oz cream cheese

    • 1 large organic egg

    • 2 teaspoons vanilla extract

    • 1/3 cup granulated monk fruit

    Topping:


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a food processor, blend the pretzels, coconut oil, egg, and monk fruit until finely crushed. Press evenly into a pie dish.

  3. Bake the crust in the preheated oven for 10 minutes and allow it to cool.

  4. In a mixing bowl, blend the cottage cheese, pudding, peanut butter powder, cream cheese, egg, vanilla, and monk fruit until smooth. Pour this cheesecake mixture over the cooled crust.

  5. Bake for 30-35 minutes or until set. Let it cool completely.
