For the Pancakes (serves 6)  

For the Tropical Filling  

  • 1/2 cup full-fat Greek yogurt

  • 1/4 cup powdered monk fruit

  • 3/4 cup finely chopped pineapple

  • 1/4 cup unsweetened shredded coconut (toasted)

  • 1/2 tsp pure vanilla extract

Extra Toppings  

  • Toasted unsweetened shredded coconut

  • Luxardo maraschino cherries

  • Thin slices of pineapple


Instructions

  1. Mix Pancake Batter: Combine the Dilettoso Choc-O-Lotta Mix with water or milk according to package instructions. Set the mixture aside.

  2. Prepare the Tropical Filling: In a bowl, whisk together the softened Greek yogurt, powdered monk fruit, vanilla extract, chopped pineapple, and toasted coconut. Once well combined, set it aside.
