Serves 2 small tarts
Ingredients
Base
1 cup of Artisana Coconut Granola
1/2 cup of organic flour
1/4 cup of Artisana Coconut Oil
Filling
1/2 cup of coconut yogurt
2 tbsp of organic corn starch
1 tsp of vanilla extract
1/4 tsp of almond extract
1/4 cup of unsweetened shredded coconut
1/3 cup of granulated monk fruit
Topping
2 tbsp of toasted unsweetened shredded coconut
2 slices of dried pineapple
Instructions
Preheat the oven to 325°F.
Crumble up the granola in a blender or food processor.
Mix in with coconut oil and flour. Press the crust dough and bake for 15 minutes. Let it cool down.
Mix together the ingredients for the filling and spoon it into each tart shell. Refrigerate for 2 hours (optional but recommended).
Top with toasted coconut and dried pineapple, and enjoy!
