Vegan Strawberry Lemon Truffles

Serves 14
Ingredients
1 cup oat flour
4 scoops vanilla plant-based protein powder
3 scoops Terra Origin Healthy Gut in Berry
1/2 cup thick coconut yogurt
1 tsp lemon zest
1/3 cup nut milk
2 cups organic corn cereal
Coating:
1 cup powdered monk fruit
1 tbsp freeze-dried strawberry powder
Instructions
In a large bowl, combine oat flour, Terra Origin Healthy Gut, vanilla protein powder, and corn cereal with coconut yogurt and nut milk until well blended.
Shape the mixture into 10 golf ball-sized truffles and refrigerate for about 10 minutes.
In a separate bowl, mix together powdered monk fruit and freeze-dried strawberry powder.
Roll each truffle in the powdered mixture until well coated.
Place the truffles back in the refrigerator for a few minutes before serving.
