Serves 14 muffins
Ingredients
1 cup gluten-free flour
1 cup oat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 pinch cardamom
2 whole eggs
2 mashed bananas
1 tsp vanilla extract
1/2 cup honey
1 1/2 cups shredded carrots
1/4 cup raisins (optional)
Strudel Topping:
1 cup Artisana Coconut Granola
6 tbsp Artisana coconut oil (melted)
Instructions
Preheat your oven to 350°F (175°C).
