Apple Honey Coconut Bread

Serves 12 slices


  • 1 1/2 cup of almond flour

  • *1tsp of xantan gum optional

  • 1 tsp of baking powder

  • 1/4 cup of unsweetened shredded coconut

  • 1 tsp of cinnamon

  • A dash of clove

  • 2/3 of RxSugar alullose (MARIA20 for discount)

  • 2 whole organic eggs

  • 1/4 cup of Manuka Honey

  • 1/2 cup of vanilla greek yogurt

  • 1 tsp of vanilla extract

  • 1/2 tbsp of apple cider vinegar

  • 1 apple

*Improves texture in gluten-free baking recipes.


  1. Preheat the oven at 350F.

  2. Chop finely the apple and microwave for 2:30-3:00 minutes.

  3. Mix all the dry ingredients. (Save some apples and coconut for topping).

  4. Incorporate the greek yogurt, vanilla extract, water and egg, apple cider vinegar, apples and honey mix well.

  5. Transfer to a silicone loaf baking dish.

  6. Top with leftover apples and coconut.

  7. Bake for 36-40 minutes and let it cool and enjoy!
