Caramel Popcorn Blondies

Serves 11 blondies


  • 1 1/4 cup of Beth Blends Gluten-Free Flour (PURELYHL for discount)

  • 1/2 tsp of baking salt

  • 1 tsp of baking powder

  • 1/3 cup of crushed caramel popcorn

  • 2/3 of granulated monk fruit

  • 1/4 cup of brown granulated monk fruit

  • 1/2 cup of Artisana Organics cashew butter

  • 4 tbsp of RxSugar Sugar-Free Maple Syrup (MARIA20 for discount)

  • 2 whole eggs

  • 1 tsp of vanilla extract

  • 1/2 tbsp of butterscotch flavor


  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the cookies.

  3. Add the wet ingredients and mix until fully incorporated.

  4. Press the dough into 11 silicone baking muffin cups.

  5. Bake for 32-38 minutes.

  6. Let cool and enjoy with whipping cream if desired!
