Cereal S'mores Buttermilk Holiday Pie

Serves 1-2
Ingredients
Pie Base
2 cups of gluten-free sugar cookie cereal (used Three Wishes)
1/4 cup of granulated monk fruit
2 bananas
1/2 tsp of baking salt
Buttermilk Filling
1 cup of Kalona SuperNatural Organic Low Fat Buttermilk
2 whole eggs
1 1/2 banana
1 tsp of vanilla extract
1 cup of gluten-free sugar cookie cereal
3/4 cup of granulated monk fruit
Toppings
1 cup of sugar-free marshmallows
1/2 cup of fresh cranberries
Instructions
Preheat the oven at 350F.
Blend the cereal for the base, then mix in a bowl with monk fruit and banana until you have created a paste.
Spread the dough into a baking dish.
Bake for 10 minutes.
Blend the ingredients for the buttermilk filling.
Pour over the baked pie crust. Bake the whole pie for 35 minutes.
Once baked top with marshmallows and roast them with a kitchen torch.
Top with cranberries and enjoy!
