For the Stuffed Bagels:

  • 2 Royo Cinnamon Raisin bagels

    For the Cheesecake Filling:

  • 1/4 cup plain yogurt

  • 2 tbsp cream cheese, softened

  • 1 tsp vanilla extract

  • 1 whole egg

  • 4 tbsp granulated monk fruit sweetener

  • 1/2 tbsp cornstarch

  • 1/2 cup fresh raspberries


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a mixing bowl, combine the yogurt, cream cheese, vanilla extract, egg, monk fruit sweetener, and cornstarch until smooth.

  3. Carefully cut a hole in the center of each bagel to create a pocket for the filling.

  4. Fill each bagel with the cheesecake mixture, then place them on a baking sheet.
