Chicken Tinga Tacos

Serves 6-8
Ingredients
4 chicken breasts, cooked and shredded
1 tbsp chipotle puree
1 tbsp chicken bouillon
1 cup tomato puree
2 tomatoes, chopped
1/4 cup water
1/3 cup chopped onion
1 bay leaf
To Serve
1/2 cup sour cream
1/4 cup chopped cilantro or shredded lettuce
2 tbsp crumbled cotija cheese or feta
Instructions
Blend the chicken bouillon, water, chipotle puree, chopped tomatoes, and tomato puree in a blender for 40 seconds.
Pour the mixture into a pot and simmer for 12-15 minutes until the sauce thickens slightly.
Stir in the shredded chicken and cook for an additional 5 minutes. Remove from heat.
Warm the tortillas in a hot skillet for about 15 seconds on each side until soft and pliable.
Fill each tortilla with the chicken tinga, then top with sour cream, cilantro or lettuce, and cotija cheese. Serve immediately.
