This recipe overall is gluten-free, low sugar and vegan friendly as well. I used the cashini (cashew + tahini) butter from Artisana Organics to create some magic along with some chocolate chips, pistachios, low carb pancake mix, and of course, some carrots.

Chocolate Caramel Pistachio Carrot Cake

Serves 1-2


Ingredients

Cake

Caramel Sauce

  • 1 tbsp of Artisana Organics Cashini Butter

  • 1/3 cup of coconut yogurt

  • 1 tbsp of maple syrup (or sugar-free caramel syrup)

  • 1 tsp of vanilla extract

Toppings

  • 1 tbsp of raw pistachios

  • 1 tbsp of sugar-free chocolate chips

Method

  1. Preheat the oven at 325F.

  2. Mix all the all the dry ingredients for the cake.

  3. Add the wet ingredients and mix again.

  4. Transfer to a small baking dish or iron skillet.

  5. Bake for 15-18 minutes.

  6. Mix the ingredients of the sauce.

  7. Top the cake with the sauce and toppings.

  8. Enjoy!
